Poké Bowl
Based on the traditional Hawaiian dish, light but filling Poké bowls are totally customizable. We love these for a dinner party with all the toppings laid out so people can help themselves. This recipe includes our vegan spicy mayo.

quinoa or sushi rice, cooked according to package
1/2
lb
sushi grade salmon, cut into bite sized chunks
1/2
lb
sushi grade tuna, cut into bite sized chunks
3-4
green onions, finely chopped

avocado, peeled and diced
1/2
cup
crispy fried onions
1/2
mango, diced
For the Vegan Spicy Mayo

tbsp
vegan mayo

tsp
rice vinegar
1
tsp
mirin
1
tbsp
chili garlic sauce
squeeze of agave
For the Sesame Soy Sauce

tbsp
coconut aminos or tamari (or soy sauce if not gluten free)

toasted sesame oil

tsp
chili garlic sauce
squeeze of agave
squeeze of lime juice
Instructions
Cook the quinoa or rice according to the package.
Split the ingredients amongst 2 bowls and top with one or both of the sauces!
Notes
Other toppings include: sliced avocado, bean sprouts, shelled edamame, shaved radish, macadamia nuts, roasted peanuts, toasted sesame seeds
